What to Order
Carbonara — silky, deep sauce from proper Guanciale. No cream. No shortcuts. Cacio e Pepe — three ingredients, executed flawlessly. Carciofo alla Giudia — the Jewish-fried artichoke. Order it if it's in season. Tiramisu — don't skip it.
The Queue
No reservations. Come 30–60 minutes before opening. They'll bring you a drink while you wait — sometimes even small pasta tastings for people in the queue. Prices: pasta €12–15, average per person ~€30.
