What to Order
Carbonara — on fresh Fettuccine all'uovo. The difference to dried pasta is immediately noticeable: silkier, a completely different texture. Cacio e Pepe — three ingredients, correctly executed. Fiori di Zucca — fried courgette flowers stuffed with ricotta and anchovies. Classic Roman, well done.
